Two delicious drinks made for every kind of guest
Long days, warm nights, and something delicious to sip - summer is all about simple pleasures. Whether you're lounging in the garden, hosting friends, or just soaking up the sun, these refreshing cocktails are made for the moment. Bursting with seasonal flavours and easy to whip up, they're the perfect way to toast the season in style.
Mint and Mango iced tea
This is a gorgeous summer drink that you can make a jug of for your non-drinking guests. You’ll need to prep it well before your guests arrive to ensure it is appropriately chilled.
Ingredients
1 mango-peeled, stoned and chopped
100g sugar
2 green tea bags
small bunch mint
1 lime- sliced
ice
Method
Put half the mango in a pan with the sugar and 100ml water. Cook for 8-10 mins then strain through a sieve and leave the liquid to cool.
At the same time boil 500ml of water, pour into a jug and add the tea bags. You can use more or less than 2 depending on the strength of tea flavour you want. Leave for 5 minutes, then strain into a glass jug and add 300ml cold water. Leave to cool completely then put into the fridge to chill.
When you are ready to serve, add the strained mango syrup to the chilled tea, along with the rest of the chopped mango, fresh mint and the lime slices. Fill up the jug with ice, stir gently and serve.
Summer Punch
This is a lovely light punch which is ideal for lunch in the garden. You can change up the ingredients for whichever herbs or fruit you fancy!
Ingredients
125ml lemon juice
50g caster sugar
250ml elderflower cordial
250ml vodka
500ml cloudy apple juice
125ml Prosecco
ice
fresh summer herbs
Citrus or strawberries to garnish
Method
Mix the lemon juice and sugar in a jug until the sugar dissolves
Add all the other ingredients and make sure you serve it super chilled
